Lemon Blueberry Cupcakes


OH. MY. GOSH. These are hands down THE BEST cupcakes I have had in my life. I'm not a huge blueberry person but after these I definitely am! Emylee and I got together and  made this frosting and literally ate it with a spoon. I thought I had died and gone to heaven. They're gorgeous too! That's why
there are so many pictures (: . These are perfect for spring!


Ingredients:
1 vanilla cake mix
2 eggs
1/3 c oil
1/4 c fresh lemon juice
1/2 c milk
1/3 c vanilla yogurt
zest of 2 lemons
1 (8-oz) container of fresh blueberries

1/2 c butter, softened
8 oz cream cheese
zest of 2 lemons
2 T. lemon juice
4 c. powdered sugar

Directions: Preheat your oven to 350 degrees. Mix together your cake mix, eggs, oil, lemon juice, milk, yogurt and lemons until well combined. Fold in your blueberries. Pour into your prepared muffin tins and bake for 20-25 minutes. For your frosting, beat your butter and cream cheese for several minutes. Add the zest and lemon juice and beat again. Slowly add your powdered sugar until it reaches your desired consistency. Pipe onto your cooled cupcakes. Enjoy!
