Cookies and Cream Cake



I now consider this my most successful baking experience. I made it for my brother's birthday and we took some to my neighbors who were practically worshiping me. I then brought it to a girl's camp fundraiser and auctioned it off. It sold for
more than 60 dollars! It is now referred in our ward as
"The Cake". It was that good!




Cake Ingredients:
2 cups sugar
2 1/4 c flour
1 c unsweetened cocoa powder
1 1/2 t baking powder
1 1/2 t baking soda
1 t salt
2 eggs
1 c milk
1/2 c oil
2 t vanilla extract
1 c boiling water
Filling Ingredients:
2 c heavy cream
1/2 c powdered sugar
15 chocolate sandwich cookies, crushed
1 t vanilla
Fudge Frosting:
1 c softened butter
1/2 c cocoa powder
3 cups powdered sugar
1 t vanilla
4 T hot water

Preheat your oven to 350 degrees. Grease 2 round cake pans and set aside. Stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil and vanilla; beat for 2 minutes. Stir in boiling water and pour your batter into the prepared pans. Bake for about 30 minutes. Cool in pan for 5 minutes then transfer onto a wire rack. Once they are completely cool stick them in a freezer for several hours. Place your metal bowl in the freezer for 5 minutes. Remove and add your cream, vanilla and powdered sugar. Beat until stiff peaks form. Fold in your crushed cookies. Split your cooled cakes in half. Fill each layer with 1/3 of the filling. Freeze again for an hour. For your frosting beat your butter and add your vanilla. Slowly add your powdered sugar and cocoa. Add the hot water and beat for several minutes. Frost your cake and enjoy!



For the fundraiser I piped a border. It made it so much prettier!
