Strawberry Limeade Cupcakes

Another delicious tart and sweet combination! 

I have to say, I have a hard time coming up with recipes and variations of things on my own, but I think these turned out great! 

I love the pink and green color combination. So vibrant!

Strawberry Limeade Cupcakes:

Yield: about 24

1 box white cake mix, make according to directions

OR

1 batch of your favorite white cake recipe

1/4 c lime juice

1 1/2 c powdered sugar

1/2 c butter

1/2 c shortening

4-5 c powdered sugar

1/3 c strawberry jam

2 T lime juice

Mix and bake your cupcakes. In a small bowl, whisk lime juice and powdered sugar to form a glaze. Poke several holes in your cupcakes with a fork and spoon a spoonful of glaze over the top. Beat your butter and shortening for several minutes, then add powdered sugar. Add your lime juice and strawberry jam and beat. You may have to add more or less, it depends on your taste. If necessary, add more powdered sugar to get to desired consistency. Pipe onto your cooled and glazed cupcakes and enjoy!
