Cream Pie

This cream pie is so good, it's not even funny. It makes either banana or coconut and both are to die for! My dad requests this for every event. I think that most people are scared to make cream pie because it sounds so hard, but if a 13 year old can do it, so can you!

Cream Pie:
(Banana or Coconut)

3/4 cup sugar
1/3 cup flour
1/8 tsp. salt
2 cups scalded milk
2 beaten eggs
2 Tbsp. butter
1/2 tsp. vanilla

Mix sugar, flour, and salt; put milk in a saucepan and stir until it's just about to a boil and it's frothing. Add flour mixture and stir constantly until it comes to a boil; boil 2 minutes and remove from heat. Beat eggs; add about 2/3 cup of hot cream mixture to eggs and stir vigorously so they don't get fried. Add egg mixture back in and continue stirring until it boils. Add butter, vanilla and any other ingredients listed below. Cool in a bowl of ice water and then pour into pie crust! Enjoy!

For Banana: Add either 1/3 tsp. lemon extract OR 1/8 tsp lemon plus 1/2 tsp. banana flavoring. Cover bottom of a cooked pie shell with sliced bananas; cover with cream filling.

For Coconut: Add 1 cup coconut to filling. After it's cooled, add 1 cup whipped cream and pour into pie shell.
