Chicken Pot Pie For a Crowd


 Chicken Pot Pie is a classic, easy, make you feel good kind of dish. If your recipe book is lacking this delicious meal, I've got a great recipe for you!
You put the normal recipe in a pie dish, but it makes so little! Even our little family of 4 could eat more than that. This recipe is twice the filling but with the same amount of crust. Enjoy!

Chicken Pot Pie:

                          1/2 cup butter                                              
                          1/2 cup flour
                          1 Tbsp minced onion (2/3 c fresh)                 
                          1/2 tsp. pepper
                          1 tsp salt                                                     
                          3 cups chicken broth
                          1 cup milk                                                     
                          2 cups cooked, diced chicken
                          1-2 bags mixed veggies                                 
                          1 potato, diced
                          1 pastry shell

                 Melt butter; add flour and stir until combined. Add onion, chicken broth and seasonings. Gradually add rest of liquid, stirring constantly until thickened. Add chicken and frozen veggies, bring just to a boil. Pour filling into a casserole dish and place pastry shell over top. Crimp edges and bake at 425 degrees for 30 minutes or until crust is golden brown.
