Corn and Cheese Chowder

 Welcome to Em and Em's! I am so exited to show you the first recipe. It's very similar to the Pioneer Woman's recipe, just tweaked a little. This soup is probably the best I've ever had. It's so flavorful. I have to warn you, I'm not an expert photographer, so bear with me. Here it goes.





In a large pot, melt your butter over medium-high heat. Add the onions and cook for a couple of minutes. Add the bacon and cook for another minute or so, then add the corn. Cook for a minute more. 


Sprinkle the flour evenly over the top and combine, then pour in the chicken broth and stir well. Thicken for 3 to 4 more minutes then reduce the heat to low. Stir in the half-and-half, cover and let simmer and thicken for 15 minutes. 


Stir in the cheese. When the cheese is melted and the soup is hot, add salt and pepper to your taste. Serve immediately. Enjoy!


Recipe:
*1/2 stick of butter
*1 whole onion, chopped
*3 slices of bacon, cut into pieces
*1 can of corn, drained
*1/4 cup all purpose flour
*3 cups chicken broth
*2 cups half-and-half
*2 heaping cup grated cheese (whatever kind you prefer,
 cheddar, pepper jack, Monteray Jack,)
*salt and pepper
